Walnut & Broccoli Pesto with Meyer Lemon and Mint

We’ll admit, we have been skeptical of these broccoli pesto recipes that have been all the rage. Until we tried this one…

The walnuts add a lovely nuttiness, the mint and lemon are bright, and the Pecorino Romano is perfectly salty. It’s meant for pasta, but is equally delicious on fish, shrimp, pork, or just slathered on bread.

Allergy warning: contains walnuts

Serving size:
A small order of pesto will sauce about 8 oz of pasta.
A large order of pesto will sauce about 16 oz of pasta.

To use on pasta: reserve about 1 cup of the well-salted cooking water from your pasta before draining. Add a few tablespoons to the pesto before tossing it with the pasta. Toss the pesto with the pasta, and add more pasta water if necessary, until you reach the desired consistency.

To thaw

  • For best results, remove from packaging and place frozen contents in a bowl. Cover and leave in the refrigerator overnight or on the counter until thawed. If you’re in a hurry, you can use the microwave or stovetop options below.

  • Microwave: Remove frozen contents from packaging and place in microwave-safe dish. Cover and heat on medium heat until just thawed, stirring at least once halfway through heating (about 4-6 minutes total). Stir well before serving.

  • Stove: place frozen contents in a saucepan and heat over low heat, stirring often until barely warmed through.
