Fall Minestrone Soup with Butternut Squash

Our fall minestrone is one seriously nourishing, soul-satisfying cup of soup. This nutrient-rich soup is made with organic butternut squash, Rancho Gordo beans, organic kale, and a slew of other organic veggies. It’s gluten free, but you can add a handful of cooked pasta if you’re so inclined. (Current photo shows pasta, but we need to retake that picture!)

We also offer a version of this soup with chicken apple sausage.

Serving size
Small size serves 1 person as a light meal.
Large size serves 2 people as a light meal.

To heat

  • Microwave: Remove frozen contents from packaging and place in microwave-safe dish. Cover and heat on medium-high heat until warmed through, stirring at least once halfway through heating (about 4-6 minutes total). Stir well before serving.

  • Stove: place frozen contents in a saucepan and heat over medium heat until warmed through. Add a tablespoon or two of water, if needed.
