Sweet Potato and Beef Shepherd's Pie
Our non-traditional (but delicious) take on Shepherd’s Pie uses pureed organic sweet potatoes, hormone-and-antibiotic-free ground beef, organic mushrooms, and a little extra tomato. We’ll admit: it’s not pretty, but it sure is delicious and comforting!
Just bake it until bubbly, and you have yourself a meal. If you’re feeling fancy, top with fresh parsley and serve with a green salad.
Serving size
Small serves 1 person.
Large serves 2-3 people.
To heat
Fast method: Preheat oven to 400 degrees. Place frozen shepherd’s pie in a small microwave-and-oven-safe dish. Cover and microwave on medium-high heat (about power level 8) for 4 minutes for the small size and 7 minutes for the large size, until almost thawed through. Uncover and bake for 10 minutes, uncovered, until bubbling. Let rest for 5 minutes before serving.
Slower method: Preheat oven to 375 degrees. Place frozen shepherd’s pie in a small oven-safe dish. Cover with foil and bake for 25 for small, 35 minutes for large. Remove foil and increase the temperature to 400 degrees. Bake for an additional 15-20 minutes, uncovered, until heated through and bubbling. Let rest for 5 minutes before serving.
