Sustainably-raised Superior Farms lamb shanks are slow-roasted with pomegranate juice, wine, spices, and vegetables until tender, We finish it with a pomegranate glaze and some carrots & leeks. (Does not include garnishes - we recommend pomegranate arils and/or some torn mint.)

Serve over couscous or with pita for a gourmet (but simple) dinner. This dish is perfect for a date night at home (Valentine’s Day, anyone?).

Serving size
One lamb shank is about a pound. It easily serves two with couscous and/or pita.
This comes packaged a little differently than our usual food: it’s vacuum sealed in an oven-safe tin.

Suggested reheating instructions
The day before you’d like to eat this dish: remove frozen lamb from vacuum sealed bag and cover tin with foil or plastic wrap. Thaw in refrigerator for about 24 hours.
About 90 minutes before you’d like to eat: preheat oven to 350 degrees. Cover tin with foil and place on a baking sheet. Bake for approximately 60 minutes, until lamb is heated through.
About 15 minutes before dinnertime: remove foil from lamb and increase oven temperature to 450 degrees. Bake for 10 more minutes at 450.
Just before eating: use tongs to transfer the lamb to a serving dish. Scoop vegetables onto dish around the lamb. Pour the sauce over the lamb and vegetables. Garnish with pomegranate arils and torn mint leaves.

Forget to thaw items? It’s ok, they’ll just take a little longer.
About 2 hours before you’d like to eat: preheat oven to 350 degrees. Remove frozen lamb from vacuum sealed bag. Cover the tin with foil and place on a baking sheet. Bake for approximately 90 minutes, until lamb is heated through. Halfway through cooking, use a spoon to baste the lamb with some of the sauce.
About 15 minutes before dinnertime: remove foil from lamb and increase oven temperature to 450 degrees. Bake for 10 more minutes at 450.
