We can’t get enough of the smoky ancho chili and hearty Rancho Gordo heirloom white corn hominy in this Mexican-inspired dish (medium-spicy). We braise chicken thighs in fire-roasted tomatoes and spices, then add hominy and finish with fresh cilantro and lime juice.
You can enjoy our posole as is or go wild with toppings — sliced radishes, chopped avocado, queso fresco, hot sauce, or sour cream, to name a few! We like to serve this dish alongside warmed corn tortillas, in a rice bowl, or as gourmet nachos with tortilla chips and guac.
Serving size
Small size makes one generous serving but can feed 2 people with rice or as tacos.
Large size makes two generous servings but can feed 3-4 people with rice or as tacos.
To heat
Stove: Place frozen contents in a saucepan and heat over medium heat until warmed through. If you prefer a thicker consistency (we do!), let simmer uncovered for a few minutes before eating.
