Hidden Veggie Meatballs with Sauce
I developed these mini chicken & beef meatballs with shredded zucchini and minced mushrooms to sneak some extra veg into my toddler’s diet, but we all like them so much that the whole family eats them!
They come in a simple tomato sauce seasoned with organic extra virgin olive oil, garlic, onion, and basil.
Toss with pasta, make meatball subs, make anitpasto skewers with mozzarella and tomatoes, or just give them to your kiddos on a fork.
Serving size
Small size is 4 mini meatballs and sauces about 1/4 lb of pasta.
Large size is 8 mini meatballs and sauces about 1/2 lb of pasta.
To heat
Microwave: remove from packaging and place in microwave-safe dish. Cover and heat on medium-high heat until warmed through, about 4-8 minutes, stirring at least once halfway through heating. Make sure meatballs are warmed through. Stir well before serving.
Stove (preferred): remove from packaging and place in a saucepan or pot. Gently heat over medium heat, stirring often, until warm. (Make sure meatballs are warmed through.) Add a tablespoon of water if the sauce is getting too thick.
Pro tip: For best results, heat in a saucepan large enough to also hold your pasta. After the sauce is warmed through, add al dente pasta to the saucepan with the sauce and toss to coat. The sauce will thicken and better adhere to the starchy pasta.
